Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery's love of hops, and how we've born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. A new school favourite delicately interwoven into our recent history, we're huge fans of Bru-1 here at Polly's HQ. Developed through open pollination at Brulotte Farms in Washington's Yakima Valley, hence the name, we absolutely vibe off how this incredible varietal bursts with freshly cut pineapple notes as soon as it hits the palate. With a clean bittering profile, we fell in love almost instantly with how well this hop works on both sides of the brewing process - both high in alpha acid and myrcene, this is at the same time boldly sweet and tropical, whilst exhibiting a subtle spiciness that makes it one of our favourite varietals to work with today.
